Preparation Steps
- In a large pot of salted boiling water, cook pasta according to instructions.
- While pasta is cooking, in a large saute pan, heat on medium-high flame, add olive oil when hot.
- Add garlic and shallots to the pan and sauté about 1 minute until soft.
- Add zucchini and season with salt, pepper, and red pepper flakes. Cook for about 1.5 minutes.
- Add diced tomatoes, parsley or basil, and chicken broth. Stir and cook for 1 more minute.
- Remove from heat.
- Drain pasta, reserving some pasta water. Toss well with zucchini and tomatoes. Add pasta water if needed and serve with grated Parmesan, if desired.
