  • 0.25 cup unsweetened applesauce
  • 3 cups granny smith apples peeled, cored and diced into 0.25-0.5 inch pieces
  • for frying canola oil
  • 2.5 cups powdered sugar sifted
  • 1 tablespoon unsalted butter melted and cooled
  • 1 teaspoon vanilla extract
  • 5 tablespoons whole milk start with 5 and add extra if needed

Method
 

Preparation Steps
  1. Heat the canola oil to 375°F in a deep fryer or heavy-duty pot. Prepare a baking tray with paper towels and a wire rack.
  2. Mix dry ingredients: whisk together flour, sugar, baking powder, cinnamon, and salt in a large bowl.
  3. Combine wet ingredients: whisk together milk, egg, and applesauce in a small bowl.
  4. Pour wet mixture into dry ingredients and stir until just combined; batter should be thick.
  5. Fold diced apples into the batter until evenly distributed.
  6. Using a 1/3 cup measure, add batter to hot oil and flatten slightly. Fry 1-1.5 minutes per side until golden. Do not overcrowd.
  7. Remove fritters with a slotted spoon and drain on paper towels.
  8. Mix powdered sugar, melted butter, vanilla, and milk to make glaze until smooth. Adjust milk to desired consistency.
  9. Dip warm fritters into glaze, then place on a wire rack to set.
