  • 1.5 cups all-purpose flour
  • 1 pint fresh blueberries
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon kosher salt
  • 0.25 cup brown sugar
  • 2 tablespoons avocado oil
  • 1 teaspoon vanilla extract
  • 0.25 cup honey
  • 2 large eggs
  • 1.25 cups unsweetened almond milk
  • to taste Maple syrup or honey
  • to taste Fresh Blueberries

Method
 

Preparation Steps
  1. Preheat the oven to 350°F and line an 8x8-inch pan with parchment paper. Set aside.
  2. Add all of the dry ingredients (minus a handful of blueberries) to a large bowl and whisk to combine. Set aside.
  3. Cream together the brown sugar, avocado oil, vanilla, and honey. Mix in the eggs and almond milk.
  4. Slowly add the dry ingredients to the wet ingredients and mix until combined.
  5. Pour the batter into the lined baking pan and bake for 25-30 minutes.
  6. Remove from oven and let it rest for a few minutes. Lift the parchment paper straight up and transfer to a cooling rack.
  7. Add optional toppings and enjoy warm or cold.
