  • 4 small crowns broccoli
  • 3 eggs eggs lightly beaten
  • 5 Tbs all purpose flour
  • 0.33 cup mozzarella shredded
  • 3 oz feta cheese crumbled
  • 2 cloves garlic minced
  • 3 Tbs dill chopped
  • 1 tsp onion powder
  • 0.5 tsp chili pepper flakes
  • salt and pepper to taste
  • Optional Dip Lazy Tzatziki

Method
 

Preparation Steps
  1. Steam broccoli crowns in about 1 inch of water for 7 minutes until fork tender. Remove and cool slightly, then chop into tiny pieces.
  2. In a large bowl, combine chopped broccoli, eggs, flour, mozzarella, feta, garlic, dill, onion powder, chili flakes, salt, and pepper. Mix until well incorporated and form into large balls.
  3. Heat 2-3 Tbs olive oil in a large skillet over medium heat. Place the broccoli balls and flatten slightly. Cook for 6 minutes per side until golden brown. Adjust heat if necessary to prevent burning.

Notes

Serve warm with a dollop of tzatziki sauce for extra flavor.
