Preparation Steps
- Preheat oven to 350F. Line an 8×8-inch pan with aluminum foil and spray with cooking spray. Set aside.
- In a large microwave-safe bowl, melt the butter for about 90 seconds.
- Add the brown sugar and vanilla to the melted butter and whisk until smooth.
- Mix in the flour, oats, baking soda, and salt until a thick dough forms.
- Press half of the mixture into the prepared pan to form an even layer.
- Bake for 10 minutes. While baking, prepare caramel sauce by melting caramel squares with heavy cream.
- Remove the pan from the oven and sprinkle the chocolate chips evenly over the top.
- Pour the melted caramel evenly over the chocolate layer.
- Crumble the remaining oatmeal mixture over the caramel layer.
- Return to the oven and bake for an additional 15 to 18 minutes until golden and bubbling.
- Allow to cool completely before slicing to let caramel set.
