Preparation Steps
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Place riced cauliflower in a microwave-safe bowl and microwave for 4-5 minutes until soft. Let cool.
- Once cool, transfer cauliflower to a clean kitchen towel and squeeze out as much moisture as possible.
- In a large bowl, combine cauliflower, 1 cup mozzarella, Parmesan cheese, egg, oregano, and garlic powder. Mix well to form a dough-like consistency.
- Spread the cauliflower mixture onto the parchment-lined baking sheet, shaping into a 10-inch round crust.
- Bake the crust for 15 minutes or until golden brown and firm.
- Remove crust from oven. Spread pizza sauce evenly over the crust.
- Add sliced mushrooms, bell peppers, and the remaining 1 cup mozzarella cheese on top.
- Bake for an additional 5-7 minutes until the cheese has melted and bubbly.
- Remove from oven, let cool for a few minutes, slice, and serve.
