  • 8 pieces chicken cutlets about 3 oz each
  • 0.5 cup whole wheat Italian seasoned breadcrumbs
  • 0.25 cup parmesan cheese divided
  • 6 tablespoons egg whites
  • 5 oz frozen spinach squeezed dry
  • 6 tablespoons ricotta cheese part skim
  • 6 oz mozzarella cheese part skim
  • 1 cup pomodoro sauce or your favorite marinara
  • 1 pinch salt and pepper

Method
 

Preparation Steps
  1. Wash and dry chicken cutlets, then season with salt and pepper.
  2. Preheat oven to 450°F. Lightly spray a baking dish with non-stick spray.
  3. Combine breadcrumbs and half of the parmesan cheese in one bowl. In another bowl, beat egg whites.
  4. Mix shredded mozzarella, remaining grated cheese, squeezed spinach, egg whites, and ricotta in a bowl.
  5. Lay chicken cutlets flat; spread 2 tbsp of spinach-cheese mixture on each, then roll and place seam side down.
  6. Dip rolled chicken in egg mixture, then in breadcrumb mixture. Place seam side down in the baking dish.
  7. Repeat with remaining chicken. Lightly spray with olive oil. Bake for 25 minutes.
  8. Remove from oven, top with marinara sauce and cheese. Bake until cheese melts, about 3 more minutes.
  9. Serve hot with additional sauce and grated cheese.

This dish pairs well with a fresh green salad or roasted vegetables.
