Preparation Steps
- Make the marinade. Whisk together lemon juice, olive oil, salt, garlic powder, onion powder, black pepper, cumin, paprika, turmeric, and cinnamon.
- Marinate the chicken. Place chicken thighs in a large bowl or zip-top bag and pour marinade over. Seal and massage to coat. Refrigerate for 1 hour.
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Arrange marinated chicken in a single layer on the prepared baking sheet. Bake for 25-30 minutes until cooked through and juices run clear.
- Remove chicken from oven. Let rest for 10 minutes, then slice. Garnish with chopped parsley.
- Serve sliced chicken with rice or in pita bread with veggies.
Notes
For extra flavor, add a dash of sumac to the marinade.
