Crust
  • 1.5 cups Graham cracker crumbs
  • 0.25 cups granulated sugar
  • 0.5 cups unsalted butter, melted
Filling
  • 24 oz cream cheese, softened
  • 1 cups granulated sugar
  • 1.5 cups sour cream
  • 8 oz semi-sweet chocolate, melted
  • 4 large eggs
  • 2 teaspoons vanilla extract
Topping
  • 1 cups heavy whipping cream
  • 2 tablespoons powdered sugar
  • 0.5 teaspoons vanilla extract
  • 0.25 cups chocolate shavings

Method
 

Preparation Steps
  1. Preheat oven to 325°F. Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan and bake for 10 minutes. Let cool.
  2. Beat softened cream cheese and sugar until smooth. Mix in sour cream and melted chocolate. Add eggs one at a time, then vanilla. Pour over crust.
  3. Bake for 1 hour. Turn off oven and leave cheesecake inside for 1 hour. Chill in refrigerator for at least 4 hours before serving.
  4. Whip heavy cream with sugar and vanilla until stiff peaks form. Spread or pipe over cooled cheesecake. Garnish with chocolate shavings.
