Preparation Steps
- Preheat oven to 350°F and prepare cupcake pans with liners. (Yields roughly 24 cupcakes)
- In a large bowl, add flour, sugar, cocoa, baking soda, baking powder, salt, and cinnamon. Gently sift ingredients with a whisk.
- Create a well in the center of the dry ingredients. Add eggs and oil. Mix by hand, then add grated zucchini and chocolate chips, folding with a spatula.
- Using an ice cream scoop, fill cupcake liners 2/3 full.
- Bake for about 15-18 minutes or until a toothpick inserted comes out clean.
- Allow cupcakes to cool completely before frosting.
