  • 4 cups Cinnamon Toast Crunch cereal
  • 1 cup butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 0.75 teaspoon kosher salt
  • 1.5 teaspoons ground cinnamon
  • 2 cups all purpose flour
  • 0.5 cup white chocolate chips *optional

Method
 

Preparation Steps
  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. Place 3 cups of Cinnamon Toast Crunch cereal in a large zip-top bag and crush until fine crumb, reserve 1 cup uncrushed.
  3. In a stand mixer with paddle attachment, cream butter and sugar for 2 minutes. Add eggs, vanilla, baking powder, salt, and cinnamon, mix until smooth.
  4. Lower the speed, add flour until just combined. Mix in crushed cereal and reserved uncrushed cereal.
  5. Using a 2-tablespoon cookie scoop, portion out dough onto baking sheet, 2 inches apart. Bake for 9-10 minutes until edges are golden.
  6. Transfer cookies to wire rack to cool completely.
  7. Optional: melt white chocolate chips and drizzle over cooled cookies.
