Preparation Steps
- Heat olive oil in a large skillet over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
- Add minced garlic and curry powder, cook for another minute until fragrant.
- Add chicken pieces, cook until no longer pink, about 7-8 minutes.
- Stir in coconut milk, bell peppers, carrots, and soy sauce. Bring to a simmer.
- Reduce heat and simmer uncovered for 15-20 minutes until vegetables are tender and chicken is cooked through.
- Add fresh spinach and cook for another 2 minutes until wilted.
- Serve hot over steamed rice or noodles.
Notes
Adjust the spice level according to your taste by adding more or less curry powder.
