Preparation Steps
- Preheat oil in a deep skillet over medium-high heat.
- Set up breading stations: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs and shredded coconut.
- Dredge each shrimp in flour, then dip in eggs, and finally coat in the coconut-panko mixture.
- Carefully place coated shrimp into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove shrimp from oil and drain on paper towels.
- Serve immediately with your favorite dipping sauce.
Notes
For an extra crispy coating, double-dip the shrimp in eggs and coconut mixture before frying.
