  • 2 pounds lean corned beef brisket
  • 3 medium carrots peeled and cut into 1-inch chunks
  • 1 cup frozen pearl onions
  • 0.25 cup chopped fresh parsley
  • 0.125 tsp whole peppercorns
  • 3 cups water
  • 1 head cabbage cut into 6 wedges

Method
 

Preparation Steps
  1. Place the corned beef, carrots, pearl onions, parsley, bay leaves, and peppercorns in the Instant Pot and add 3 cups of water.
  2. Seal the lid and cook on high pressure for 1 hour and 30 minutes. Let the pressure release naturally.
  3. Add the cabbage wedges on top, close the lid, and cook on high pressure for 3 minutes. Quick release the pressure.
  4. Remove the meat and slice into 6 pieces. Serve with cooked vegetables and broth.
