  • 0.5 pound bacon
  • 3 large russet potatoes peeled and chopped into 1/2 to 3/4 inch pieces
  • 1 teaspoon kosher salt
  • 0.75 teaspoon freshly ground black pepper
  • 1.5 cups shredded cheddar or Mexican blend cheese
  • 3 green onions sliced thin

Preparation Steps
  1. Preheat the oven to 400°F. Spread the bacon strips on a large rimmed baking sheet and place on the middle rack. Bake for 16-18 minutes until crispy, then remove and set aside.
  2. While the bacon is cooking, peel and chop the potatoes. Drain excess bacon grease leaving 2-3 tbsp in the pan. Toss potatoes in the pan to coat with bacon grease, then season with salt and pepper.
  3. Spread the potatoes in a single layer and bake for 20 minutes. Stir well, bake another 20 minutes, then stir again and bake 15 more minutes until golden and crispy.
  4. Chop the cooked bacon into small pieces. Remove the potatoes from the oven, sprinkle with shredded cheese and bacon pieces, then bake for an additional 2-3 minutes until the cheese melts.
  5. Remove from oven, sprinkle with sliced green onions, and serve hot. Enjoy!

Feel free to add extra toppings like sour cream or jalapenos for added flavor.
