  • 0.75 cup unsalted butter softened
  • 1 cup brown sugar
  • 1 large egg room temperature
  • 0.25 cup molasses
  • 4 tablespoons granulated sugar for rolling

Preparation Steps
  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In the bowl of a stand mixer with the paddle attachment, beat the butter and brown sugar until light and fluffy.
  4. Beat in the egg, then stir in the molasses.
  5. Gradually add the dry ingredients to the wet mixture and mix until combined.
  6. Shape the dough into 1-inch balls, roll in granulated sugar, and place on lined baking sheets.
  7. Flatten slightly and bake for 8 to 10 minutes. Cool on wire racks.

Notes

Store cookies in an airtight container for up to a week. For softer cookies, store with a slice of bread.
