  • 1.5 lbs zucchini sliced into rounds, salted and drained
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 8 oz mushrooms diced
  • 0.5 tsp salt
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 lb ground beef
  • 0.5 tsp paprika
  • 1 cup marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • 2 tsp Italian herb blend
  • 2 tbs grated Parmesan

Preparation Steps
  1. Preheat oven to 400°F.
  2. Heat the olive oil in a large skillet over medium-high heat. Sauté the onions and mushrooms until tender, about 4-5 minutes. Add salt, garlic powder, and onion powder. Remove and set aside.
  3. In the same skillet, cook ground beef until browned. Mix in paprika, salt, garlic powder, and Italian herb blend. Stir until well combined and cooked through.
  4. In a baking dish, layer zucchini slices, sautéed vegetables, cooked ground beef, marinara sauce, and top with mozzarella cheese, Parmesan, and Italian herbs. Repeat layers if desired.
  5. Bake for 30 minutes until cheese is golden and bubbly. Remove from oven and let rest for 5 minutes before serving.
