  • 0.5 cup honey
  • 1 lemon lemon juice
  • 2 tablespoons dijon mustard
  • 3 tablespoons olive oil
  • 0.5 cup teriyaki sauce
  • 1 clove garlic minced
  • 1 pound boneless chicken breasts cut into bite-size cubes
  • 2 pieces peaches washed, cut into 1/4-inch slices
  • 1 small zucchini cut into 1/4-inch slices
  • 1 red bell pepper cut into 2-inch cubes
  • 1 onion onion sliced into 2-inch cubes
  • 8 skewers bamboo skewers

Method
 

Preparation Steps
  1. Combine honey, lemon juice, dijon mustard, olive oil, teriyaki sauce, and minced garlic in a mixing bowl and whisk until thoroughly combined.
  2. Set aside 1/2 cup of the marinade and pour the rest into a large resealable plastic bag with the chicken pieces.
  3. Seal the bag and refrigerate for at least 2 hours to marinate.
  4. Preheat the grill over medium heat.
  5. Thread chicken, peaches, zucchini, bell pepper, and onion onto the skewers.
  6. Place the skewers on the grill over direct medium heat.
  7. Cook for 12 to 15 minutes, turning occasionally and brushing with the reserved marinade, until the chicken is cooked through.
  8. Serve hot and enjoy.

Notes

Use fresh ingredients for best flavor. You can also substitute other vegetables as desired.
