  • 0.75 cup unsalted butter cold, cut into cubes
  • 1 cup light brown sugar packed
  • 0.25 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 2.25 cups all-purpose flour
  • 0.6667 cup cake flour
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 1 cup peanut butter chips

Method
 

Preparation Steps
  1. Preheat your oven to 400°F. Line two baking sheets with parchment paper.
  2. In a stand mixer, beat cold butter, brown sugar, and granulated sugar until creamy.
  3. Add the egg and egg yolk, continue mixing until combined.
  4. Mix in vanilla extract.
  5. In a bowl, whisk together all-purpose flour, cake flour, salt, baking powder, and baking soda.
  6. Gradually add dry ingredients to the wet mixture and mix on low speed.
  7. Add chocolate chips and peanut butter chips, mix just until distributed.
  8. Shape dough into 8 balls, about 6 ounces each.
  9. Place dough balls on the prepared baking sheet, spacing evenly.
  10. Bake for 12-13 minutes or until edges are golden brown.
  11. Cool cookies on the baking sheet for 10 minutes, then transfer to a wire rack.
  12. Serve warm or at room temperature.
