Preparation Steps
- Place one can of beans and 2 cups of chicken broth into a blender; puree until smooth and add to the slow cooker.
- Add remaining beans, chicken broth, tomatoes, bell pepper, green chiles, cumin, ancho chile powder, garlic powder, onion powder, oregano, chicken breasts, and half of the cilantro to the slow cooker.
- Set the slow cooker to high for 4 hours or low for 6 to 8 hours.
- Once done, remove chicken and shred with two forks.
- Return shredded chicken to the slow cooker, add remaining cilantro, scallions, and season to taste.
- Serve hot with lime wedges, sliced avocado, and optional sour cream.
