- Preheat grill or broiler. Grill pineapple chunks for 3-4 minutes per side or broil for 5 minutes until lightly charred.
- Remove pineapple, let cool slightly, then chop into small pieces.
- In a bowl, combine diced tomatoes, red onion, chopped cilantro, lime juice, minced chipotle peppers, and salt.
- Add grilled pineapple to the bowl and toss gently to combine.
- Serve immediately or chill for 30 minutes to allow flavors to meld.
