  • 0.5 cup heavy cream
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 0.5 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup grated Parmesan

Preparation Steps
  1. Cook the spaghetti in boiling salted water according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add pumpkin puree, heavy cream, cinnamon, nutmeg, salt, and black pepper to the skillet. Stir to combine and heat through for about 5 minutes.
  4. Toss the cooked spaghetti into the sauce, coating thoroughly. Sprinkle with grated Parmesan before serving.

Notes

This dish is perfect vegan if you substitute Parmesan with nutritional yeast.
