Preparation Steps
- Preheat the oven to 325°F.
- Spread oats and quinoa on a parchment-lined baking sheet.
- Toast for 10 minutes, stirring once.
- Remove from oven, transfer toasted oats to a medium bowl, and mix with flax seeds, pepitas, pecans, and cranberries.
- Reduce oven temperature to 300°F.
- In a separate bowl, combine maple syrup, pumpkin puree, oil, pumpkin spice, cinnamon, salt, and vanilla.
- Pour over the oats mixture and stir with a spatula.
- Spread back onto the baking sheet and bake for an additional 20 minutes until golden.
