  • 8 pounds pork shoulder
  • 2 tablespoons olive oil
  • 2 cups fennel bulbs
  • 2 cups yellow onions
  • 4 tablespoons kosher salt
  • 2 tablespoons black pepper
  • 0.5 cup fresh rosemary, chopped
  • 1 cup fresh parsley, chopped
  • 0.25 cup fresh oregano, chopped
  • 0.25 cup fennel pollen
  • 0.25 cup lemon zest
  • 2 tablespoons orange zest
  • 8 cloves garlic, minced

Method
 

Preparation Steps
  1. Preheat the oven to 300°F. Score the pork and tie with butcher's string for even roasting.
  2. Heat 2 tablespoons of olive oil in a large skillet and sauté fennel and onions until lightly caramelized.
  3. Mix salt, pepper, rosemary, parsley, oregano, fennel pollen, lemon zest, orange zest, and minced garlic to make seasoning.
  4. Rub the seasoning evenly over the pork, then wrap tightly with butcher's string.
  5. Chill the pork uncovered for at least 24 hours for skin to dry out for crispiness.
  6. Place the pork on a roasting rack and bake for 220 minutes, baste occasionally.
  7. Increase oven temperature to 450°F and roast for an additional 25 minutes until skin is crispy.
  8. Let rest for 20 minutes before slicing and serving.

Notes

Make sure to dry out the skin for a perfectly crispy finish.
