  • 1.5 lbs boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup cherry tomatoes halved
  • 1 medium red onion sliced
  • 4 pieces pita bread for serving
  • 0.5 cup tzatziki sauce

Preparation Steps
  1. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment paper.
  2. In a large bowl, toss the chicken breasts with olive oil, smoked paprika, ground cumin, garlic powder, salt, and black pepper until evenly coated.
  3. Place the seasoned chicken on one side of the sheet pan. Add cherry tomatoes and sliced red onion to the other side; drizzle with a little olive oil and sprinkle with salt.
  4. Bake for 20-25 minutes until the chicken is cooked through and vegetables are tender.
  5. Remove from oven and let chicken rest for 5 minutes. Slice the chicken into strips.
  6. Warm the pita bread in the oven for 2-3 minutes. Serve pita stuffed with chicken strips, roasted vegetables, and a dollop of tzatziki sauce.

Notes

For extra flavor, marinate the chicken in the spice mixture with olive oil for at least 1 hour before baking. Serve with a side salad or hummus for a complete meal.
