- In a large skillet over medium heat, heat the olive oil. Add the shrimp and garlic; cook, flipping halfway, until shrimp are pink and opaque, about 2 minutes per side. Turn off heat and add hot sauce, tossing to coat.
- Assemble the wraps: Place about 1/4 cup of the cooked shrimp in the center of each lettuce leaf. Top with sliced red onion, sliced celery, drizzle with blue cheese or ranch dressing, and sprinkle with chopped chives if desired.
