  • 1 cup uncooked orzo
  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 1 small yellow onion finely diced
  • 3 cloves garlic minced
  • 4 cups chicken broth vegetable broth works too
  • 0.5 cup black olives pitted and chopped
  • 0.5 cup crumbled feta cheese
  • 2 tablespoons fresh lemon juice divided
  • 1 teaspoon lemon zest
  • 0.25 teaspoon salt
  • 0.125 teaspoon fresh ground black pepper
  • 0.25 cup chopped fresh parsley for garnish

Method
 

Preparation Steps
  1. In a mixing bowl, whisk together 1 tablespoon lemon juice, lemon zest, salt, and pepper; add the shrimp, toss to coat, and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add onion and cook until softened, about 3-4 minutes.
  3. Add garlic and cook for 15 seconds, stirring frequently.
  4. Add orzo and cook for about 4 minutes, stirring often until lightly browned.
  5. Pour in chicken broth and bring to a boil. Reduce heat and simmer for about 10 minutes, stirring occasionally.
  6. Stir in olives and ΒΌ cup feta cheese. Add lemon juice, remaining lemon zest, and season with salt and pepper.
  7. Nestle the shrimp into the orzo mixture; cover and cook for 3-4 minutes until shrimp is opaque and cooked through.
  8. Remove from heat and top with remaining feta cheese and chopped parsley.
  9. Serve hot garnished with parsley.
