  • 1 bunch asparagus tough ends removed, quartered
  • 1 tbsp olive oil
  • 6 large shrimp peeled and de-veined
  • 0.5 cup chicken broth
  • 2 oz white wine
  • 8 oz angel hair pasta wheat or gluten-free
  • 2 cloves garlic thinly sliced
  • 1 tsp herbs de Provence or your favorite herbs
  • 0.5 tsp red pepper flakes
  • salt and pepper to taste

Method
 

Preparation Steps
  1. Season shrimp with salt and pepper. Heat a large skillet on high.
  2. When skillet is hot, add olive oil and cook shrimp for 1-2 minutes on each side until almost cooked through. Remove and set aside.
  3. Reduce heat to medium, add garlic and sauté until golden, about 1 minute.
  4. Add tomatoes (if using) and season with salt and pepper. Sauté until tender, about 4 minutes.
  5. Pour in white wine and chicken broth; stir and cook for 1 minute. Add asparagus, herbs de Provence, red pepper flakes, salt, and pepper. Cover and simmer for 10 minutes until vegetables are tender.
  6. Meanwhile, cook angel hair pasta in salted boiling water until al dente, then drain.
  7. Return shrimp to the skillet and cook for 1 minute to finish cooking. Add cooked pasta and toss to combine.
  8. Serve immediately, garnished with herbs if desired.

Notes

Feel free to add a sprinkle of Parmesan cheese before serving.
