  • 2 lbs boneless skinless chicken breasts
  • 14.5 oz can petite diced tomatoes with green chilies
  • 3 count bell peppers (preferably red, yellow, green)
  • 1 large yellow onion
  • 4 cloves garlic (minced)
  • 2.5 tsp chili powder
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 0.75 tsp ground coriander
  • 1 tsp salt
  • 0.75 tsp pepper
  • 2 Tbsp fresh lime juice
  • 1 Tbsp honey
  • 12 count flour tortillas (6-inch size)
  • cilantro, sour cream, salsa, guacamole, sliced avocados, shredded Mexican cheese (optional toppings)

Method
 

Preparation Steps
  1. Pour half of the diced tomatoes into the bottom of a slow cooker and spread evenly. Top with half of the sliced peppers and onions. Add minced garlic. Place chicken breasts on top.
  2. In a small bowl, whisk together chili powder, cumin, paprika, ground coriander, salt, and pepper. Sprinkle half of the spice mixture over the chicken, flip to coat equally. Add the remaining tomatoes, peppers, and onions.
  3. Cover and cook on HIGH for 2-3 hours or LOW for 4-6 hours until chicken is cooked through and vegetables are tender.
  4. Remove chicken, shred or slice into strips. Discard excess broth if desired. Mix lime juice and honey, add to the slow cooker along with the chicken. Gently toss to combine.
  5. Serve in warm tortillas with optional toppings such as cilantro, sour cream, salsa, guacamole, or shredded cheese.
