  • 1 medium spaghetti squash yields approximately 3 cups cooked
  • 0.5 cup Parmesan cheese freshly grated
  • 1.5 tablespoons extra virgin olive oil
  • 0.25 teaspoon Kosher salt

Preparation Steps
  1. Preheat oven to 400F. Cut the squash in half lengthwise and remove seeds. Season with salt and pepper, place face down on a baking sheet, and roast for 60 minutes.
  2. While the squash is roasting, cook the bacon until crispy, then drain on paper towels and chop into pieces.

  3. Once cooled, scrape out the spaghetti-like strands with a fork and transfer to a bowl. Mix in olive oil, Parmesan cheese, and bacon.
