Preparation Steps
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add ground beef to the pot and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the chopped bell peppers and cook for 3-4 minutes until slightly softened.
- Add uncooked rice, diced tomatoes, beef broth, oregano, salt, and pepper to the pot. Stir well to combine.
- Bring the soup to a boil, then reduce heat to low. Cover and simmer for 40 minutes or until the rice is tender.
- Taste and adjust seasoning if needed. Serve hot.
