- Wash the red bell peppers and slice off the tops. Remove the seeds and membranes. Stand each pepper upright in a baking dish.
- In a large skillet, cook the ground turkey until browned and cooked through. Drain excess fat. Add cumin, salt, crushed tomatoes, black beans, and corn. Simmer for 15 minutes.
- While the filling simmers, cook the Jasmine rice according to package instructions.
- Mix the cooked rice into the skillet with the turkey mixture until well combined. Remove from heat.
- Fill each prepared bell pepper with the turkey and rice mixture. Place filled peppers in the baking dish.
- Sprinkle the tops with cheese and cover with foil. Bake in a preheated 350°F oven for 40-45 minutes.
- Remove foil, sprinkle sliced green onions on top, and bake for an additional 5 minutes until cheese is melted and bubbly.
