  1. Preheat the oven to 400 degrees Fahrenheit. Pulse the peeled sweet potato and oats in a food processor until very finely chopped. Add the egg, salt, garlic powder, and olive oil; pulse again to combine into a dough-like consistency.
  2. Transfer the mixture onto a parchment-lined baking sheet or pizza pan. Shape into a round crust about 1/4 to 1/2 inch thick. Bake for 25-30 minutes until the edges are crispy and the top is dry.
  3. Remove the crust from the oven, add your favorite toppings, and bake for an additional 10 minutes until the cheese (if using) is melted and bubbly. Let cool slightly before slicing and serving.
