- Heat olive oil in a large pot over medium-high heat. Add carrots, celery, and onion, and sauté for about 7 minutes until vegetables begin to soften.
- Add minced garlic and cook for another 1 to 2 minutes.
- Pour in the broth, add sage, rosemary, thyme, oregano, and black pepper. Bring to a boil and let simmer for 5 minutes.
- Add egg noodles and cook for 8 to 10 minutes until tender. Check liquid level and add water if necessary.
- Stir in shredded turkey and cook for 1 to 2 minutes until heated through.
- Taste and season with salt as needed. Serve hot.
