  • 0.5 cup vegetable oil
  • 1.5 cups granulated sugar
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon kosher salt
  • 3 cups finely shredded zucchini DO NOT DRAIN
  • 1.25 cups semi-sweet chocolate chunks

Method
 

Preparation Steps
  1. Preheat oven to 350°F and prepare a 9x13 pan with butter or baking spray, lining with parchment paper that goes up the sides for easy removal.
  2. In a large bowl, combine oil, sugar, and vanilla until fully incorporated.
  3. Add flour, cocoa powder, baking soda, and salt. Mix until combined. Batter will be very dry.
  4. Fold in shredded zucchini by hand. Allow batter to rest for 5 minutes.
  5. Add chocolate chunks and stir again. Batter should appear more wet. Let rest for an additional 5 minutes if not.
  6. Spread the batter into the prepared pan and bake for 25-35 minutes. Brownies are ready when a toothpick inserted comes out with crumbs, not wet batter.

Notes

Optional: add a sprinkle of sea salt on top before baking for enhanced flavor.
